An easy mid-week meal, which also tastes
great when used as a burrito filling with cheese and plain yogurt or sour
cream. The only problem is that it isn’t very photogenic!
In Ireland you can buy smoked paprika in Tesco, I haven't seen it anywhere else.
1 onion chopped
2 cloves garlic, minced
1 red or green pepper chopped
1 red or green chilli minced (depending on heat, maybe use less)
1 tbsp tomato puree
1 large carrot, grated
1 can chopped tomatoes
1 can of mixed beans (aldi 59cent)
1/2 tbsp dried oregano
1 tbsp smoked paprika
1/2 tbsp veg stock powder
black pepper to taste
Fry onion in oil for about 5 mins, add garlic and stir for another minute, then add the pepper and chilli and continuing frying for another 3 minutes.
Add puree and stir for 1 minute, then add the chopped tomatoes, paprika and oregano and pepper. Add the carrot. Simmer for about 5 mins, then add the drained beans. Continue simmering till the carrot is softened and it tastes good, (about 15 mins).
Serve with brown rice and a dollop of low fat yogurt (optional).
